Ingredients:
100g unsalted butter
100g dark chocolate pieces 70% minimum
40g caster sugar
2 medium eggs
2 egg yolks
60g self-raising flour
Some coco powder (optional-decoration)
Step 1:
Melt the butter and chocolate in heatproof bowl over simmering water. Usual step, don't let the water touch the bowl. Stir them and leave to cool
aside.
Heat the oven to 170°C. Butter the ramekin/pudding base.
Step 2:
Whisk the sugar, eggs and egg yolks until double the size. Pale yellow. Should leave a trail.
Step 3:
Add the melted and cooled chocolate and butter into the sugar and egg mixture. Fold the mixture using wooden spoon.
Step 4:
Sift the self-raising flour to the mixture. A little bit at a time. Then fold again using the wooden spoon. Until all the flour is used.
Step 5:
Then pour the mixture into the ramekin. I think you need at least 3 ramekins. 4 are good. Then put it into the oven for 12 minutes. The pudding should
be set but still wobbly. Take it out of the oven. Leave it for 1 minute. Then (if needed) you can use knife to separate from the bowl. Then, just turn
it over the serving dish...And it will wobble... Add a scoop or two ice creams... or you can decorate with the chocolate powder. And eat...
The crunchy bit should be crunchy and very light... It's a nice dessert but it's about 490 kcal per serving!!!
